金丝皇菊茶总黄酮浸泡工艺及抗氧化活性研究

摘要: 为研究金丝皇菊茶总黄酮最佳浸泡工艺及其体外抗氧化活性,在单因素试验基础上,应用Box-Benhnken中心组合法进行3因素3水平试验设计,以总黄酮含量为响应值,进行响应面分析,并通过测定DPPH、ABTS自由基清除能力和铁还原力进一步研究茶汤体外抗氧化活性。结果表明,金丝皇菊最佳浸泡工艺为料液比1∶64 g/mL、浸泡时间22 min、浸泡温度94 ℃,在该条件下,总黄酮含量为57.56 mg RE/g,茶汤DPPH、ABTS自由基清除力和铁还原力IC50值分别为36.32、0.44、90.02 μg/mL。表明金丝皇菊茶具有较好的抗氧化活性,同时为金丝皇菊茶饮的开发及研究提供参考。

Abstract:

In order to optimize soaking process of total flavonoids from Imperial Chrysanthemum tea and antioxidant activity of the tea infusion.Based on the results of single-factor tests,Box-Benhnken center composite design was carried out with the content of total flavonoids as the response values.Furthermore,the DPPH and ABTS radical scavenging ability and reducing force of tea Infusion were studied.The results showed that the process of optimum extraction were the solid-liquid ratio of 1∶64 g/mL,soaking time of 22 min,soaking temperature of 94 ℃.Under these conditions,the content of total flavonoids was 57.56 mg RE/g,and the IC50 values of DPPH and ABTS radical scavenging capacity and reducing power were 36.32,0.44,90.02 μg/mL.These results indicated that Imperial Chrysanthemum tea showed good antioxidant activity and provided a reference for further development and research.
