气相色谱-质谱-嗅辨法辨析7种天竺葵油中关键香气成分

摘要:

最近的研究发现采用气相色谱-质谱-嗅辨法(gas chromatography-mass spectroscopy-olfactory detector,GC-MS/O)可以辨别天竺葵油的香气分路并研究其成因。这项研究旨在采用GC-MS/O,通过强度法结合质谱库检索确定7种天竺葵油的关键香气成分并描述香气轮廓评价各自香气风格。在16倍稀释因子浓度下嗅辨7种天竺葵油,共嗅辨出24种关键香气成分,它们分别是香叶醇、β-香茅醇、香叶酸甲酯(天竺葵香);芳樟醇、玫瑰醚、香叶基乙基醚、乙酸香叶酯、γ-衣兰油烯(玫瑰花香);三甲基环己烯醇、反式氧化芳樟醇(呋喃型)、苯乙醇、L-薄荷酮、异薄荷酮、L-薄荷脑(青香);乙醛二乙缩醛、异戊醇、α-蒎烯、1,1-二乙氧基-3-甲基丁烷、白柠檬环醚、β-蒎烯、柠檬烯(果香);顺式氧化芳樟醇(呋喃型)、甲酸香叶酯、α-衣兰油烯(果脯香)。

Abstract:

A recent study found that the aroma quality of geranium oil could be identified by gas chromatography-mass spectroscopy-olfactory (GC-MS/O).This study aimed to describe the aroma profiles and evaluate the aroma image.Twenty-four key aroma components of seven kinds of geranium oils were identified with intensity method and mass spectrometry library,which were geranium aroma including geraniol,β-citronellol,camphorin methyl ester;Rose aroma including linalool,rose ether,ethyl geranyl ether,geranyl acetate,γ-itranolene;Green aroma including trimethyl cyclohexenol,trans-oxide linalool(furan type),phenyl ethanol,L-menthone,isomenthone,L-menthole;Fruity aroma including acetaldehyde diethyl acetal,isoamyl alcohol,α-pinene,1,1-diethoxy-3-methylbutane,limetol,β-pinene,limonene;Preserved fruit aroma including cis-oxide linalool (furan type),geranyl formate,α-itranolene.
