摘要: 由于抗氧化反应的复杂性和多样性,目前测定物质抗氧化活性的方法虽然很多,但还没有标准的统一的测定方法和测定参数。由于CUPRAC法所采用的CuCl2-新亚铜灵试剂具有诸多优点,CUPRAC法已广泛的应用于多组分抗氧化剂活性的研究。本文综述了经典及改进的CUPRAC法在多组分抗氧化剂活性研究中的应用,同时探讨了其优点和不足。

Abstract: Because of the complexity and diversity of antioxidant reaction,many methods have been used to determine antioxidant capacity.However,there was not a standard and unified method and parameter until now.Because of many advantages of CuCl2-neocuproine used in the CUPRAC method,the CUPRAC method has been widely applied to determine antioxidant capacity.In this article,the application of the main and modified CUPRAC methods in the study of antioxidant capacity of multicomponent was reviewed.The advantages and disadvantages of those methods were discussed.
