壳聚糖对新鲜银耳保鲜及活性氧代谢影响研究

Effect of Chitosan on ROS Metabolism and Post-harvest Preservation in Fresh Tremella fuciformis

摘要: 本研究探讨壳聚糖对鲜银耳保鲜效果及活性氧代谢的影响。用浓度为0.3%壳聚糖处理新鲜银耳,实验结果显示,壳聚糖处理显著降低鲜银耳病情指数(P<0.05),在贮藏前期诱导O2、H2O2及ASA含量升高,诱导提高PPO、CAT、SOD、APX、PPO活性,抑制POD活性上升。说明壳聚糖处理可以诱导银耳体内活性氧爆发,加速了银耳体内活性氧清除反应;增强银耳体内抗病性,延缓鲜银耳采后成熟衰老。

Abstract: The effects of chitosan treatment on the disease resistance,the content of the active oxygen metabolism of Fresh Tremella fuciformis were investigated.Fresh T.fuciformis were treated with 0.3% chitosan.The results showed that chitosan processing significantly reduced disease index of fresh T.fuciformis (P<0.05); O2, H2O2 and ASA content was increased in the early storage;PPO,SOD,CAT,APX,PPO activity was enhanced,only POD activity was decreased by treatment.In conclusion,chitosan treatment can eliminate reactive oxygen species (ROS),enhance disease resistance and delay the ripening and senescence in fresh T.fuciformis.
