Purification of Anthocyanins from Aronia melanocarpa by Resins and Its Stability Features

Abstract: In this study,anthocyanins extracted from Aronia melanocarpa was purified by five resins.HP-20 resin showed the best purification performance.The optimal conditions for the purification of anthocyanins using HP-20 resin were determined as follows:40% ethanol (contains 0.5% acetic acid) as elution solvent,pH 2.0,the adsorption conditions were using 0.6 mg/mL of pigment solution,the adsorption and desorption flow rates were 1 mL/min.The color scale increased about 8.5 times under the optimized purification conditions.The results indicated that HP20 resins exhibited the excellent characteristics for the purification of anthocyanins from A.melanocarpa. The stability experiments showed that anthocyanins exhibited poor stability to sunshine,heat,oxidant and reductant.Metal ions of Na+, Fe2+, Zn2+, Mg2+ and Mn2+ exhibited little effect on anthocyanins stability.In alkaline environment anthocyanins were completely destroyed.Hence,it was concluded that anthocyanins of A.melanocarpa should be stored at low pH and temperature,dark,avoided to contact with Cu2+, Al3+ and Fe3+.
