Extraction and the Components of Red Cabbage Pigment

Abstract:

The aim of this work was to extract pigment from red cabbage and study its major components. The effects of different factors on extraction of pigment with orthogonal test were investigated in this experiment. The optimal parameters were as fellows: ethanol-water (60:40, v/v) was as extracting solvent, solid-liquid ratio was 1:50, pH=1, extracting time was 60 min. After purified with AB-8 resin, red cabbage pigments were analyzed by using liquid chromatography-mass spectrometry (LC-MS). The results showed that there were seven major anthocyanins and their acylates in red cabbage pigment.
