Antioxidative Activity of exopolysaccharide Produced by Enterobacter cloacae Z0206

Abstract:

The experiment was conducted to prepare Exopolysaccharide (EPS) from Enterobacter cloacae Z0206 strain through fermentation and to evaluate its antioxidant activity. By determining the reducing capability, the scavenging effects of EPS on 1,1-diphenyl-2-picrylhy-drazyl (DPPH) radicals, superoxide anion free radicals, and hydroxyl radicals, the antioxidant activity of EPS were evaluated. The results showed that the yield of EPS was 6.62 g/L and the scavenging effects of EPS on the DPPH free radical and the hydroxyl radicals reached 61.57% and 40.08% at concentration of 5 mg/mL, respectively. The EPS exhibited obvious antioxidant activity and was worthy of exploitation in future.
