Abstract:

The extraction of gardenia yellow from Gardenia jasminoides Ellis was studied in this paper and gardenia yellow was extracted by mixed-enzymes and ultrasonic extraction technology, and the mathematical model of correlation among enzyme dosage, extraction temperature, extraction time were established by means of response surface method. The results indicated that the optimum extraction conditions are as follows: enzyme dosage 4.33%, extraction temperature 61.84 ℃, and extraction time 65.06 min. Under these conditions, the absorbance of gardenia yellow is 0.914.
