Study on Antioxidant and Bacteriostasis Activity of Ethanol Extract of Ginger Products

Abstract: To study the antioxidant and antimicrobial activities of the ethanol extracts of ginger,dried ginger and candied ginger.The antioxidant activities of the three extracts were compared by detecting the DPPH and ABTS radical scavenging activity and reducing power.The antimicrobial activities of the three extracts against Staphylococcus aureus, Escherichia coli, Pseudomonas aeruginosa and Bacillus subtilis were compared through antimicrobial tests.The results showed that three ginger ethanol extracts had certain antioxidant activity in a dose-dependent relationship.These extracts presented different inhibitory effects against 4 common bacteria.The order of inhibitory effect was dried ginger>ginger>candied ginger.These results provided a scientific basis for further researching on the antibacterial effect of ginger products and developing safe food additives.
