Studies on Phenolic Compounds and Their Antioxidant Activities in Trifolium Repens

Abstract: Phenolic compounds content and its antioxidant activities of Trifolium repens in different parts and seasons were performed.Total phenolic content (TPC) and total flavonoid content (TFC) in different parts change in the following order:leaves>stems>shoots in four seasons.However,TFC in different parts change little with the seasons.Notably,the decreased trend of DPPH and FRAP was also in the same order of leaves>stems>shoots in four seasons.The results of Rancimat showed that the extract has a certain protective effect for the oxidantion of oil and fat.Moreover,a strong correlation between TPC,TFC and antioxidant activities indicateed that phenolic compounds as the main components were responsible for the antioxidant behavior of Trifolium repens,and there was a good correlation between cinnamic acid,gallic acid,caffeic acid and genistein.This study implies that Trifolium repens may be a potential dietary supplement and a valuable natural source of antioxidants used in food industries.
