Abstract:

Alcoholic liver disease has become a widespread public health issue, with relatively high morbidity and mortality rates posing a serious threat to human health.Edible fungus polysaccharides are one of the most common functional active compounds in edible mushrooms, and they have significant health benefits, particularly in the prevention and treatment of certain common diseases. The biological activities of edible fungus polysaccharides are closely related to their monosaccharide composition, molecular weight, and structure. In order to offer fresh perspectives and a theoretical foundation for the prevention and treatment of alcoholic liver disease as well as the development of natural drugs, this paper compares and summarizes the current structural analysis of edible fungus polysaccharides and their regulatory mechanisms on alcoholic liver disease.
