The Composition and Antioxidant Activity of Rice Germ Polysaccharide

Abstract: This paper mainly analysed the monosaccharide composition analysis,amino acid analysis and antioxidant activity of rice germ polysaccharides.The monosaccharide components of rice germ polysaccharide were determined by 1-phenyl-3-methyl-5-pyrazolone column pre-column derivatization with high performance liquid chromatography.The amino acids in the rice germ polysaccharide were detected by amino acid automatic analyzer.The results showed that the rice germ polysaccharides consisted of mannose,rhamnose,glucuronic acid,galacturonic acid and glucose with the ratio of 0.90:4.62:2.02:1.52:35.30.Rice germ polysaccharide detected 17 kinds of amino acids,total amino acid content of 2.01%.The DPPH radical scavenging rate of rice germ polysaccharide was 43.03%,the scavenging rate of superoxide anion free radical was 47.84%,the scavenging rate of hydroxyl radical was 64.12%,and the reducing power increased with increasing concentration.Rice germ polysaccharide can improve the activities of SOD,T-AOC and GSH-Px in the serum and tissues of mice and decrease the content of MDA.Rice germ polysaccharide, in vitro and in vivo, has a certain degree of antioxidant.
