Hydrolysis of Geniposide by β-Glucosidase in a Two Phase Solvent System

Abstract: In this research, an organic solvent/water two-phase solvent system was used in catalysis of geniposide. Comparing with other two-phase systems, n-butanol/water system was screened as the optimal system for its best distribution of geniposide (74.2%) and genipin (22.1%) in the water phase. According to this two phase solvent system, the product genipin would transfer from aqueous phase to n-butanol phase immediately. Under the optimal conditions of 50 ℃, pH 5.0 and 180 rpm, the conversion rate of geniposide at 10 h was determined to be 86.6% by HPLC-UV.
