Abstract: 1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging,[2,2′-azino-bis(3-ethylbenzothiazoline)-6-sulphonic acid] diamonium salt (ABTS) radical scavenging and ferric reducing antioxidant power (FRAP) assay were used to evaluated the extracts of S.miltiorrhiza and different processed products with BHT as positive control. The results showed that the extracts from S.miltiorrhiza and different processed products had antioxidant activity. The ethyl acetate extract of S.miltiorrhiza carbon showed the strongest radical scavenging power on DPPH and the IC50 value was 13.9 μg/mL;The ethyl acetate extracts of fried S.miltiorrhiza and wined S.miltiorrhiza and the n-BuOH extract of S.miltiorrhiza carbon exhibited the highest radical scavenging power on ABTS and the IC50 value was 2.1 μg/mL,The ethyl acetate extract of rice fried S.miltiorrhiza had the biggest value of FRAP and IC50 was 1517.81 μmol/g.And the different processing methods varied on the different antioxidant activity power of Salvia miltiorrhiza Bunge, however, the antioxidant activity of Salvia miltiorrhiza carbon was better.
