Abstract: Response surface methodology(RSM)was applied to optimize the extraction conditions of resveratrol from grape leaves. On the basis of single factor experiments, the influence of ethanol concentration, ratio of liquid to solid and extraction temperature on the extraction yield of resveratrol were investigated based on Box-Behnken central composite design. The results showed that the optimal extraction conditions were as follows:ethanol concentration of 46%,liquid to solid ratio of 23 mL/g and extraction temperature of 62 ℃.Under the optimized conditions, the predicted value of concentration of resveratrol was 47.55 μg/g and the measured value was 47.96 μg/g.
