Effect of Chitosan on ROS Metabolism and Post-harvest Preservation in Fresh Tremella fuciformis

Abstract: The effects of chitosan treatment on the disease resistance,the content of the active oxygen metabolism of Fresh Tremella fuciformis were investigated.Fresh T.fuciformis were treated with 0.3% chitosan.The results showed that chitosan processing significantly reduced disease index of fresh T.fuciformis (P<0.05); O2, H2O2 and ASA content was increased in the early storage;PPO,SOD,CAT,APX,PPO activity was enhanced,only POD activity was decreased by treatment.In conclusion,chitosan treatment can eliminate reactive oxygen species (ROS),enhance disease resistance and delay the ripening and senescence in fresh T.fuciformis.
