Preservation Effect of Bamboo Leaves Ethanol Extract and Lemon Juice on Sugarcane Juice

Abstract: In order to prolong the preservation time of sugarcane juice,after the sugarcane juice was sterilized,bamboo leaves ethanol extract and fresh lemon juice were added into it.By single factor experiments,influence of microwave power (A),microwave time (B),the dosage of bamboo leaves ethanol extract (C) and lemon juice (D),on preservation effect of sugarcane juice were investigated.On the basis of single factor experiments,the L9(34) orthogonal tests were designed.The preservation effect was determined through the varying of physicochemical properties (pH,transmittance,sugar content,turbidity and Vc content) and sensory evaluation of sugarcane juice.The sample was characterized by UV and FT-IR.The result showed that at room temperature,the optimal conditions for preservation of sugarcane juice,were microwave power (A) of 300 W,microwave time (B) of 9 min,dosage of bamboo leaves ethanol extract (C) of 3.0 mL,and dosage of lemon juice (D) of 2.0 mL.Under these conditions,the sensory indexes,physical and chemical indexes of sugarcane juice was good within 8 days.
